Cassoulet, a matter of passion
Castelnaudary's iconic dish, from the farm to the cassole
Castelnaudary calls itself the world capital of cassoulet, and here the dish is handed down like an heirloom. Your day begins at a duck farm, where the farmer shares their trade and traditions, before choosing with you the produce for the afternoon class.
After a farmhouse lunch at the château, our chef reveals the secrets of a true Castelnaudary cassoulet, cooked in an earthenware terrine. In the evening you enjoy the house cassoulet at dinner, and everyone leaves with a jar of cassoulet from the Escudier house.
